Supporting Good Food

As a renowned chef, Marks always keen to use his skills to encourage fantastic food and great cooking. In 2006 Mark supported The Essex Food Festival to showcase local produce and in the same year took part in a campaign to promote Essex as a tourist destination with the Essex Development and Regeneration Agency. He has gone on to work with Essex County Council as an advisor and judge for the Essex Food and drink Awards since they began.

In 2009 Mark was chosen to spearhead a campaign run by the NHS to bring healthy food to Essex. He advised and trained cafe and takeaway owners how to prepare a healthier option as an alternative to their most popular dishes – and so the Basildon Burger was born! He’s also working with the Essex Air Ambulance to support their “Great Essex Feast” fundraising campaign.

Having Fun

Well known for his more unusual antics, Marks always looking to put the fun in food. Such as:

  • The case of spectacles that diners can use to read the Brasserie menu if they’ve forgotten their glasses.
  • Cooking up a 35lb hot cross bun which took four hours to bake and was three feet wide. It was made at Baumanns Brasserie and donated to St Helena Hospice.
  • Cooking sizzling summer sea bass stir fry in his own beach hut on the Frinton seafront for the residents and holiday makers.
  • Creating a 5 stone 3lb Christmas pudding for the Essex Ambulance Service which was enjoyed by 200 staff at the service HQ.
  • Devising yet another quirky ice cream, this time Oyster & Caviar developed for Valentines Day with local firm Hadleys Ice Cream.
  • Staging photo shoots bound and gagged, emerging from the sea and even hanging upside down!.
